When a blizzard strikes in March, what do you do?! Brunch!
When I was growing up my family ate crêpes almost every week. My Grandmother and Great Grandparents are from The Netherlands, so some of our family traditions have distinctly European origins. Whenever we can steal away time to get together as a family these crêpes are one of our most anticipated treats!
My mixing bowls are from my Great Grandmother. She handed this recipe down and I imagine the bowls remember how she used to make these crêpes which may account for why they turn out so well.
The Recipe:
-Relaxing music (French perhaps?)
-2 eggs
-3/4 cup of milk
-1/2 cup of water
-1 cup of flour
-1/8 tsp of salt
-1/8 tsp of sugar
-1 tsp of vanilla
-1 tsp of melted butter
1. Whisk the eggs, milk, water and vanilla in a mixing bowl.
2. Mix the flour, salt and sugar in a separate mixing bowl.
3. Gradually add the flour-salt-sugar mixture to the “step one” liquid and beat with whisk until smooth.
4. Let the mixture sit for a few minutes to let the bubbles escape.
5. Add melted butter to a frying pan to create a non-stick surface. Using a 1/3 cup measuring cup, add batter to pan and rotate pan in circular motion to evenly distribute batter (It’s all in the wrist). Cook for a few minutes on each side until the crêpe reaches a golden color. Repeat.
Serve with fresh berries, honey, syrup, powdered sugar etc. This time we enjoyed filling the crêpes with lemon curd and raspberries for a tart variety.
